Two Cowboys are Pulling Some Pork with No Sleep at Porkapalooza in Edmonton, Alberta

You are a Dad. Where would you like to be on Father's Day?

There is a happy place for the Cowboys on any given day. It is right next to a cooking fire, with a cold beverage in hand, surrounded by our favourite people. It doesn't matter what day of the year it is, the weather, or what we are supposed to be cooking and eating. Simply, there is no fun in cooking or drinking alone. We treasure barbecuing, braai or merely preparing and sharing food. This ancient social ritual and tradition come naturally to us. 

When it is Father's Day, the one day we as fathers can choose what it is we want to do, then it is only logical for us to look for the biggest celebration we can find of our primal right of passage. During 24 hours, we want to congregate with well-lubricated bacon and smoke-reeking fellow devotees around open fires, and our favourite cooking machines. These are folks, that know what it takes to patiently savour every moment tenderizing Pork Butts, melting Briskets and crisping Pork Ribs. 

It is a bonus if we can also have our families with us on the day. That is why we salute Alberta Pork and Porkapalooza's organizers for making our Father's Day an extra special day for us this year. We attended our first ever Porkapalooza, which included all the above, and we lived to tell the story.

The festival was a free two-day event that celebrated all things BBQ with one of Canada's largest KCBS sanctioned BBQ competitions. Porkapalooza is one of four Alberta Cup BBQ competitions taking place year.

Anyone was welcome to attend (even the Vegans), and it included plenty of activities for families and food lovers to enjoy. Guests were invited to check out guided tours of the competition area and cooking demonstrations from professional chefs. While the parents submerged themselves into the BBQ underworld, the kiddies were kept busy in a play area and a Kids’ Zone.

The competition featured over $15,000 in prize money with almost fifty teams vying for the prize money. It also included a chef’s challenge and special young chef event.

The festival is organized by the Porkapalooza BBQ Festival Society, a non-profit organization, with generous financial support from Alberta Pork and other amazing sponsors.

Observations


Everyone in Western Canada BBQ land has their own reasons why Porkapalooza is the highlight on their annual calendar. For many, it is a chance to learn, catch up with friends, hang out with mates, be serious about cooking, have fun, or compete to win. Vendors bring their latest BBQ gadgets to try, and producers showcase their meat, sauces and other ingredients. Teams compete to validate their skills, test their equipment, eat good food, and generally solicit favour with the KCBS gods.

We are glad that we had a chance to be part of Porkapalooza 2019. Even though we've been hanging around the Alberta smokers for a few years now, we could never fit this pinnacle event into the calendar. We are glad we finally did.

We are also glad we got to know more of, and about, the people passionate about BBQ. We are thankful for the new friendships and appreciate the support they've shown for the Cowboys. We feel like we succeeded in getting a seat at the smoker!

Enjoy the highlights of the event as we introduce you to a few of our new BBQ friends and catch up with others. Sincere thanks to Darcy and Porkapalooza that made it possible for us to be there. We look forward to seeing you all back in 2020. Who knows, maybe the Cowboys will compete and win a few prizes next year. Maybe we should also throw a hat in the ring...

Two Cowboys: In-depth Investigation Into Custom BBQ Use at the Annual BBQ on the Bow Competition in Calgary, AB

We are told that people can't find the tools they need to become prize-winning BBQ pitmasters.

That is why we did an in-depth investigation into the phenomenon of custom BBQ design and constructions at this year's 25th annual KCBS BBQ competition, hosted by Alberta's (possibly, even Canada's) oldest BBQ Society.

BBQ on the Bow is an annually occurring Kansas City BBQ Society (KCBS) sanctioned BBQ Competition and outdoor festival.

It takes place at the Montgomery Community Association (Shouldice Park) during Labour Day long weekend. Their mission is to spread the love, passion, and joy for “southern style” BBQ while simultaneously celebrating and promoting local products, businesses, and musicians. Now you know why the Two Cowboys took an interest. They had us already at BBQ. We also share a similar passion for products, the people that make them and the people that sing about them.

The association was founded in 1993 which, according to Bernie Kenney (VP of the Association) makes it one of the first of its kind in Canada. The BBQ on the Bow was created to jointly promote “Southern BBQ” and Alberta agricultural products of pork, beef, and chicken.

This year it celebrated its 25th year. The event has endured everything mother nature threw at it over the years, be it floods, snow, winds and other storms. It has evolved from a small competition with a  handful of teams to one of Canada’s premier competitions with over 35 teams competing annually.

Forty-five teams competed this year, in spite of a Province wide fire ban, which makes it an event for the record books. It may also be because of the fire ban that so many teams grabbed the opportunity to do some BBQing in a controlled and permissible environment before BBQ withdrawal sets in.

Observations


We are amazed at every competition to see the number of home-grown, self-built BBQ's that make it to competition. The people that take the plunge into constructing a custom smoker machine are seasoned pitmasters or very adventurous engineers.

Big brand name smokers, which are usually in ample supply in such a competition, are often associated with newbies or with teams that managed to get that all elusive sponsorship from a well-known brand or manufacturer. We've heard that some teams are even bribed into merely displaying a big brand name smoker (not necessarily cooking with it) for a small fee. You know who they are because the smokers are all clean, shimmering in the sun and brand new.

The more salted pitmasters have their go-to smokers customized and seasoned over time to meet their particular need or style of cooking. We are told that these smokers have personality. "She's like a woman. If you treat her well, with respect, she will make a BBQ champion of you", a pitmaster proclaimed, which will remain nameless.

One way you know that custom machines are worth their weight in smoke and iron is that they are the tools that show years of wear and tear. These smokers worked and will continue to do so. The meat-fat, grease, and caked on carbon from weeks, months and years of use serve as one-of-kind seasoning that provides a unique and unduplicatable taste to the fare. That is why these smokers end up with names and their teams with the medals.

What makes a BBQ Smoker, good?

If you listen to the champions, some like even heat in the cooker. Others want different temperature profiles on the same machine so that the machine becomes multi-purpose. Some smokers are suited to the purists that cook and smoke with wood. Others are "cheaters" with computer controlled pellet feeders and convection fans.

One fact above all distinguishes a champion pitmaster and his team. It doesn't matter what tools they use. The machine helps, but it is their experience and finely tuned palate that separates them from the rest. They are also the ones busy cooking while the rest are looking.

Two Cowboys: Simple, Locally Made, Innovative and Durable BBQ Smoker From a BBQ Champion, Calgary, AB

Bernie Kenny has spent enough hours, days, weekends and years cooking with fire so that he knows just what is needed to turn in championship quality BBQ and deliciously prepared charcoal cooked fare.

That is why he came up with an ingenious, simple and affordable device to do "everything" BBQ at once. Bernie is the inventor, perfector, and proprietor of the Smokinbox, which is incidentally also the name of his championship winning BBQ Team.

The Smokinbox is a BBQ grill and a smoker in one. It can even do it simultaneously. According to Bernie, it is easy to clean and very fuel efficient. It has a solution that allows you to cook vegetables, smoke chicken and grill a steak all at the same time, and fast enough so that you can do it after work, during weekdays.

The Smokinbox has been performing well in competitions where competitors use anything from a $150 Weber to the flagship Backwoods Smokers to compete. Amongst the competition, it took first place for ribs at North Battleford competition, in Saskatchewan, and a first and second with two different teams at the Calgary Stampede. It took a third place overall in Edmonton's Porkapalooza with 39 teams. Justifiably, the Smokinbox is turning heads in Canadian BBQ circles for a good reason.

Observations


Why are we so enthusiastic about the Bernie's Smokinbox?

We are interested because it is a product that is passion driven and locally Alberta-made. Bernie has spent his whole life contemplating the perfect BBQ cooking solution, refined it, got his friends involved, and now we have a simple, well-made product that stands out. As with all goods developed from a maker's passions, it is likely to last you your lifetime.

A further reason we are enthusiastic about the Smokinbox is that we BBQ eight out of the seven days of every week. We know the hassle that goes into using charcoal and wood instead of propane. We are aware of the mess, the frustration, the time it takes, the challenges with temperature control and the risks of too much smoke ruining a good piece of meat (or vegetable). Bernie thought of everything.

The single biggest factor for us that makes the Smokinbox a favorite is that we can charcoal cook at different temperatures in one device. It means we can do our vegetables at the warmer end. Our low and slow at the lower end, and still grill a steak right over the coals.

We don't take part in BBQ competitions. Pitching our experience against novices will be unfair. We are not excited about the Smokinbox because it can help us become BBQ champions. We like it, because, for us, every BBQ or Braai as we call it, needs to be perfect. With the Bernie's Smokinbox it becomes so much easier.

We like it so much that we asked Bernie if we can promote it for him. He agreed, so stay tuned for many more stories from our adventures using the Smokinbox for our meals and learning from Bernie how best to BBQ the Canadian Champion way. Traveling Cowboys: 2017 Feast and Frolicking and SmokinQ some BBQ at Lynnwood Ranch, Okotoks, Alberta

It's not BBQ. It is chef inspired gourmet cooking with locally sourced Alberta produce. Alberta Pork, Beef, Chicken, Alberta smoke and truly amazing Alberta BBQ talent.

Gus Leduc and his team at Lynnwood Ranch hosted the annual KCBS' Alberta Chapter, BBQ on the Bow, for the seasonal kick-off of Alberta's 2017 low and slow BBQ competitions. If this sounds like a mouthful, let me explain.

The Kansas City Barbecue Society (KCBS) is a nonprofit organization dedicated to promoting and enjoying barbecue. It is the world's largest organization of barbecue and grilling enthusiasts with over 20,000 members worldwide. KCBS sanctions over 500 barbecue contests worldwide. The annual event at Lynnwood Ranch is one of three in Alberta where a team can earn a ticket to the annual World Championships in the U.S.A.

The Feast and Frolic precede the SmokinQ competition to give the BBQ teams a fantastic feast, a dance and a chance to be judged on the preparation of inspirational food items outside the KCBS criteria. Almost 300 people attended the event to sample from a series of starter dishes prepared by the teams. It was accompanied this year by Gus' own outstanding smoked brisket and "Alberta" salmon.

Competition day is known as SmokinQ. This year 35 teams competed with a fair number of newcomers to the "sport" of BBQ. I questioned Steve Alvarez (the KCBS representative in attendance) on why it is referred to as a "sport"? He clarified, "There is a lot of physical activity that goes into preparing good Southern Style BBQ. It can take up to 18 hours to have the food prepared perfectly and on time for judging". We here mistakenly thought that to eat BBQ was the sport!

Observations


The hospitality at Lynnwood Ranch was as usual, outstanding. There was nothing too much for Gus and Wendy when we wheeled in our Motorhome on Saturday afternoon ahead of the Feast and Frolic. They are the perfect hosts.

If there is one thing that stands out in the BBQ community other than the great food, it is the community and the friendships amongst the people involved. People from different locations, as far as Manitoba come to the event. They are from diverse backgrounds, varying levels of cooking skills and experience. All of them come together for a fabulous weekend around their love for a particular type of food. If you were ever looking for a real festival of food, then this is the single best place to experience it all first-hand.

We are glad we can be part of it all and tell the stories of the people involved.

Lynwood Ranch, just South of Calgary hosted the first of three events for the Kansas City Barbeque Society's (KCBS) Alberta Cup Competition, 2016.



It was one of three sanctioned events in Alberta that agreed to offer BBQ teams an extra chance at winning some special prizes with their smoked brisket, pork ribs, pulled pork and chicken. It all happened at Lynwood ranch on 14 and 15 May, 2016, and we were there.

This was Lynnwood Ranch’s second annual KCBS sanctioned BBQ competition and BBQ Feast. The KCBS BBQ Competition “Smokin Q” was started in 2015 after a friend, Bernie Kenny of BBQ on the Bow paid a visit to Gus & Wendy LeDuc at Lynwood Ranch. Bernie spoke of the need for more BBQ competitions in Alberta, and naturally this well known ranch came up as the perfect location to kick off the tour. (Bernie is on the lookout for more venues to have more competitions for his 150 qualified BBQ judges. It is a great idea to get the community involved, do some fundraising, and have a major tourism event with awesome food. Get in touch with him here.)

We, the Two Cowboys were ready to get on a plane to New Zealand for some prior commitments. But, we just couldn't pass on Gus' invitation to attend the event before the big day. There is no way we can leave without getting a taste of Alberta's legendary Barley fed pork at the BBQ Bash “Feast & Frolic”. This event preceded the competition the next day. With the help of the BBQ teams that were competing, Lynwood Ranch put on an amazing feast for almost 300 people attending.

Impressions


I've learned one important thing from attending this amazing event: "This is serious business!" 

As born and raised South Africans we can probably write the book on barbecue. We "braai" at least three times a week since birth. However, nothing could prepare us for what we were to experience. 

The food flavours, sophistication and complexity we tasted could rival items from any menu in a five star restaurant establishment, anywhere in the world. Some of the meat smoking technology were space-age computer contraptions with minute tolerances and titanium precision. It was amazing to see the care and commitment that went into the most exquisite byte of flesh, jalapeƱo or burned-end. In contrast, the purists relied on perfect ingredients, traditional flavours, simple smokers and a lot of love and care for their art.

The biggest impression on us was seeing how much fun people were having. It was a weekend family affair for the teams, and also for the spectators. Folks travelled together, ate together and drank together. Everyone was made to feel welcome.

Hopefully, this is the first of many instalments we get to bring you of Alberta's barbecue underworld. It is definitely something people should know more about. 

Lynwood Ranch is the place where you can lose your barbecue virginity. Gus and his team has a first class venue. He himself knows a thing or two about southern style barbecue. He is famous for his prime rib roast. Don't pass on an opportunity to taste one of the best. Gus, thank you for giving people a chance to cook great food.
