Two Cowboys: Every Individually Perfect Pierogi is Pinched by Hand in Airdrie, Alberta

The Little Things


When you work with dough, every batch is a little different. Only the trained eye and the sensitive touch of a master baker is in tune with the moods of the gluten gods. They all say that knowing dough is to understand its feel.

The perfect pierogi has the same demands for detail and attention. Emma Linton knows that to craft the ideal delicate shell of her creative flavour explosions, she has to pay particular attention to the dough’s consistency, bounce and stretch. She feels with her hands for when the mixture is perfect. Every pierogi is hand-crafted. She makes her pierogies the way its traditionally been made. She pinches them by hand.

When she makes them by hand, she can trust each one to provide a thin, yet sturdy housing for her traditional and more adventurous fillings. The shell enhances the overall taste of the morsel, and it promises to remain closed so that no filling leaks out during steaming, cooking, frying or grilling.

Emma makes a lot of pierogies. She sells them at several farmers’ markets in and around Calgary. It is also available for online order through her website (http://www.pinchedbyhand.com) and delivery within Alberta.

We checked in to see how she does it and she obliged us with a privileged look into the inner-workings of pierogi making genius, by taking us through her processes. We are not divulging any secrets, but it is safe to say that as it is with all the simple classical recipes, it has a lot to do with the method of making and with the quality of the ingredients. In the case of pierogies, it also has a lot to do with practice and patience.

Pinching every one by hand is a tedious job. Why then the attraction is to do it? According to Emma, pierogi making was, and still is a family affair. It has a social aspect to it. It brings people together to collectively prepare food and share a meal - something that is quite unique to our species. When Emma makes pierogies, it brings her people together, and it is her hope and wish that it does the same for others.

Observations


Pierogi making is a lot simpler than most people think. A little dough, some filling, a bit of creativity, practice and patience and time with family and friends around the kitchen table.

Not only is it simple, it also allows small quantities of food to go a long way. If you have leftover meat or vegetables from another meal that you prepared, you can mush it together and work it into a filling for pierogies. Add some extra spices or flavouring sauces, and you will soon have your own style and unique pierogi creations. Freeze it to keep it and fry it up with lots of butter when it comes time to enjoy it.

Rudolph is sleeping. That is what we were told when we visited the Spruce Meadows Christmas Market for 2016 on opening weekend. All the other Reindeer were there. They were getting ready for the annual Christmas Night marathon with Mr Clause. Rudolph may not be disturbed. He is preparing in his way. By meditating at Spruce Meadows.

There isn't much snow around Calgary, Alberta yet. The temperatures are dropping for sure and that means winter is here. It also means that Christmas is near.

The market at Spruce Meadows is one of the biggest in Alberta. At the market, there are more than 250 Artisan vendors that come from as far as Quebec and Nanaimo. They all make their annual pilgrimage to Alberta's Prairie city to tap into the biggest opportunity offered by Canada's fastest growing city. Some consider the market as their significant opportunity for last-minute revenue before Christmas. Call it their Christmas bonus.

The International Christmas Market is held over three weekends. This year it is November 18-20, November 25-27 and December 2-4, 2016.

Hand-Made in Alberta


There were many familiar faces at the market. They are the vendors we've met during our year of covering the area's Farmers' Markets. It is encouraging to see so many of the local producers well represented. Some local producers use the market to launch a new product or new packaging. The agricultural producers like the cheese makers, beekeepers and maple syrup vendors, all bring their products to market after the year's good harvest.

There were also new vendors that launched their products for the first time. A Christmas market is a great opportunity for fledgeling producers to validate their offering. They can give prospective customers a first-hand taste or view of their goods and solicit immediate feedback. It is also they time when they discover just how much work goes into building their businesses.

The Christmas Market is the perfect place to unwind with friends and soak up the festive atmosphere. It is the perfect place to shop, dine and socialise. It is a great opportunity to support our local producers. Spruce Meadows is the ideal venue for the market with lots of indoor space, the agricultural setting, and ample parking.

If there is one item missing from the market it would be our mobile food vendors we encountered all over Alberta's markets. We understand that the weather doesn't always co-operate to have food vendors outside. On the other hand, we've covered amazing food producers that will jump at the opportunity to help feed the thousands of visitors at this market. We are Canadian after all. Who is worried about a little cold?

Calgary may not be the most optimistic city in Canada at the moment due to continuing economic pressures. The market showed little of the recession. While spending may be under pressure in the city, local production is up. People are making more things. Christmas cakes, gloves, chocolate, bags, cheese, perogies, woodcraft, shoe polish, and much, much more. If there are no readily available jobs in the city, there will always be enterprising folk that finds a way.

The Spruce Meadows Market is such a way where you can bring your wares to market, and you can support your neighbour. We are glad we made the trip. We are glad we can meet our friends and neighbours at the market. Most importantly, we are glad that our money spent is going towards helping a neighbour grow his or her local business.

o-CNN: Mountain Market Day in Canmore, Alberta

Market Day in the Rockies


The Canmore Mountain Market is a summer tradition for over twenty years. It is an opportunity for local businesses and budding entrepreneurs to step out of their buildings, into the downtown core, and meet fellow traders and customers in person. It is an all round fun day once a week, with friends and acquaintances.


Rain or shine, this market showcases a variety of locally and regionally produced items including fresh fruits and vegetables (with seasonal Alberta and B.C. options when available) elk meat, fresh poultry, gelato, nougat, toffee, olive oil, crafts and baked goods. Buskers perform, and the food scene at the market is growing with gourmet choices in burgers, cheese melts, crepes, waffles, gelato and more.

The Market is located next to the Canmore Civic Centre Plaza right in the heart of downtown on 7th Avenue and runs every Thursday from 10am-6pm May 26th to October 6th. This may be a problem in future, because according to Canmore Business and Tourism the market is three times over subscribed. There just isn't enough space in the allotted downtown core to accommodate everyone.

You need to know a local to get a spot. It may be time for Canmore to consider expanding the market, or find a new location where more businesses can be accommodated. We want more businesses in Canmore and more people to enjoy our great town, don't we? If Canmore misses this opportunity, another location is bound to accommodate the demand and Canmore may lose out. That is just how business works.

It is inspiring to see so many people wanting to trade in Canmore and to see the quality of businesses that make it to this market. Who knows, the next step may well be an all season market for Canmore. It has my vote, for sure.
