Traveling Cowboys: Wing Night With the Two Cowboys in Waterton Lakes National Park, Alberta, Canada

"Wing Night is a ceremonial and sacred evening during which many chicken wings will be eaten by a gathering of gluttonous friends. Each step of the preparation and consumption of the wings is carefully orchestrated and held holy. Deviation from tradition (i.e. inviting your girlfriend, not eating til breathing is difficult, leaving early, not toasting the first wing, not getting everyone a beer when yours is finished or you get up, bringing non-wing food to the gathering, de-winging during the meal) is strictly and violently forbidden. The only consumables other than chicken wings welcome at wing night are blue cheese dressing, celery stalks, and beer - lots and lots of beer."

We checked in with three establishments in Waterton Lakes National Park's Town Site to find more out about their wing offerings. We were spoiled for choice in what is essentially a really small town. Here is what we found.

Zum's Eatery and Mercantile 

Zum's is an institution when it comes to southern-style fried chicken in Waterton. As a result, their chicken wings didn't disappoint. They know their chicken. It was lightly breaded, well cooked and succulent to the bone.

The sauce didn't have the kick we were looking for. Instead, it had the flavour that complemented the wing nicely. The challenge with southern-style wings is that it is a rich wing. You will have to pace yourself not to fill up too quickly.

Is it a typical Wing Night wing? For the Cowboys, it needed more heat and we will probably not run out of beer, as you should when having Zum's hot wings. It is more your Sunday lunch kind of wing. Add the restaurant's amazing patio and scenery and you have a must-do stop in Waterton where you can take the whole family for fried chicken.

Thirsty Bear Kitchen and Bar

The Thirsty Bear is the Bar and a favourite hangout in Waterton. All bars need hot wings on the menu at the Thirsty Bear didn't disappoint.

The Cowboys would have liked to have a few more than three choices of wings on the menu. Considering the gourmet-feel the rest of the menu offers patrons, it may have made the choices too hard. We usually get distracted by the Truffle Mac n Cheese. If there was a way to dip our wings in that we may just have gotten ourselves into trouble.

For this particular occasion, we tried the hot wings. It came with a unique Dill Dip (get the Aussie to say it ;-)) that was almost as good as the Mac n Cheese. Go for the dip when you visit! The wings needed more heat to be classified Cowboy hot, which is probably acceptable given the delicate flavours of the dip.

The Thirst Bear stands out for its excellent selection in craft beers. If Shameer's cook can make the wings hotter, they may just get us to drink (a lot more) of the delicious local beer.

Trappers Mountain Grill

If there is one place that spared no expense in laying out the red carpet for the Cowboys it was Steve West and the crew at Trappers. Here comes the disclaimer: You will probably need a VIP access pass to the Trappers' inner circle to get the buttery smokey gourmet wings laid out for us during our visit. What we tasted was from Trappers' test kitchen. We took one for the team and every bite was worth it!

I think we convinced Steve to put the new flavour wings on the menu if he can manage to repeat the feat and make the food cost work. A lot of labour and love went into making these wings and it was the most flavourful wings we've tasted thus far.

Steve is not going to like what comes next. Sorry, Steve, we needed more heat. Not burning heat. Rather, more flavour heat. Something that made us thirsty. The beers were huge and icy cold and we were dearly looking for an excuse to have even more beer. We didn't get it. We ended up looking for more wings instead!

Observations


Waterton has a variety of food establishments and a great community of people. While chicken wings may not (yet) be a good reason to make the trip, who knows, it may become one in the future.

Two Cowboys: Smoking Meat, Cold Beer and BBQ is a Lifestyle at Trappers Mountain Grill in Waterton, Alberta

I once asked a competitor at a Canadian BBQ Society sanctioned competition how long he's been grilling and smoking meat. He surprised us with his answer. Two years, he said. Truth be told, my question was meant as a joke! We didn't know there was another way to cook meat. We've been doing it for all our lives.

BBQ, smoking and grilling meat is a lifestyle for the Two Cowboys. Five out of seven days, at the close of the day, we are outside doing our thing with steak, chicken, pork and whatever we can find to cook on the grill or in the smoker (including vegetables like pumpkin, asparagus, potatoes etc.).

We've done it in rain and sunshine, in blazing summer heat and when it is -30 C in Canada. To us, it is a sacred, primal, right of passage as a reward for being at the top of the food chain. We cherish the opportunity. The rite that plays itself out alongside our grill, fire or smoker is as old as humanity itself. It is who we are. We love every moment of it and are always looking forward to it. In the same way, we are always on the scout for fellow comrades with a similar passion and commitment to the lifestyle.

We meet many during our travels and we love telling their stories. This is how we've come to know Steve and Debbie West from Trappers Mountain Grill in Waterton, Alberta. Steve shares our love for BBQ and cold beer. He is also an innovator and a passionate entrepreneur that makes Waterton his home for six months of the year when he is not fishing in Florida. Steve likes to do something unique that allows him to share his passion for good food, BBQ, Gin and Beer.

Observations


This is how Trappers Mountain Grill is launching something new in Waterton this season. Steve calls it his Backyard BBQ. The plan is, once the rush of the summer days subsides and the lines for food and ice cream are over, to do a delicious smoked meat sandwich. It will be available at the back-door of his restaurant on main street Waterton Avenue.

It promises to be an excellent sandwich that will go down well with your own crispy cold beer (sorry folks, you have to bring your own beer). For Steve and his team, it is another way of sharing their passion for cooking meat in one of the worlds most picturesque locales. He is doing it with his new US$35,000 smoker!

Apparently, he's been practicing all winter to get the recipe locked down, and it is finally ready for the "big time". In his own words, "It is a mean piece of equipment with the single purpose of delivering the best-smoked fair available in Waterton town" - authentic Southern-Style BBQ.

Steve's venture promises to deliver a hearty meal and great fellowship when most food establishments in the town close down for the evening. It is the way it should be done, simply and deliciously with good friends. The Two Cowboys were there to give it a try. Enjoy our experience with us.

Traveling Cowboys: The ¡Perfecto! (Best) Margarita at Aroma Mexican Restaurant in Canmore, Alberta

The problem with our line of work is that our palates are spoiled. We have the privilege and plenty of opportunities to eat the best and drink the fantastic wherever we go. The result is that our expectations are high. It also means that our standards are ever-increasing.

We do have our favourites, though. Ever-so-often, we have to circle back to what we refer to as "our people". They are our friends where to we travel. Visiting them, eating and drinking the best they have on offer is like wearing a familiar pair of comfortable shoes or sitting in a favourite chair. There is no pretence. It is the casual and a part of us.

This is how our love affair started with Margarita, until Laura at Aroma Mexican Restaurant in Canmore, Alberta made it enduring.

A margarita is a cocktail consisting of tequila, triple sec, and lime juice, often served with salt on the rim of the glass. The drink is served shaken with ice (on the rocks), blended with ice (frozen margarita), or without ice (straight up). Although it has become acceptable to serve a margarita in a wide variety of glass types, ranging from cocktail and wine glasses to pint glasses and even large schooners, the drink is traditionally served in the eponymous margarita glass, a stepped-diameter variant of a cocktail glass or champagne coupe.

There are various stories about the origins of the drink during the earlier parts of the last century. However, most people know its murdered cousin found at the typical all-inclusive Mexican hideaway or passed-off as a drink-of-choice for riotous partying Springbreak youngsters in warmer climate locations.

We've discovered that the real Margarita is a drink with character and a power that should not be underestimated. Laura at Aroma Mexican Restaurant in Canmore introduced us to her. Aroma is now our favourite place for our Margarita-time because we've not succeeded in duplicating their version. This spurred us into action. We had to find out more about the secrets behind their particular version that makes it so uniquely delicious.

Chef Jose Castillo and Laura Matamoros were both born in Mexico City and raised in the kitchen. In 2009 they introduced the Bow Valley to their authentic and traditional Mexican cuisine in the Bow Valley. The restaurant has a warm and cozy atmosphere. It emulates the intimacy felt around a Mexican’s family kitchen table. Jose, himself is behind the stove in the kitchen.

He offers a fusion of Indigenous and Spanish cuisine, traditional sauces, tortillas, and desserts. All are artisanal homemade and slow cooked from scratch for each order. It is worth the wait if you are lucky to get a seat during the busy times. We know Jose and Laura personally, so it is our weekly culinary gourmet trip to Mexico. There is always a special table reserved for us, the "familia".

Observations


Laura took us on an expedition of Margarita discovery without divulging a single secret. From that perspective, we failed in our quest to know how to make an excellent Aroma Margarita.

Instead, we journeyed through the traditional, the flavourful, the herby, the fruity, smokey and the savoury. Just as our faculties began to fail at number four (or was it six), Laura managed to wake us with the kick of a spicy Jalapeno signature Margarita. After that, it all became a blur!

Aroma is not a "fancy" restaurant. Jose and Laura succeeded in keeping it personal and homey with really good traditional, but refined food. If you take time to get to know them, you will find it quickly turns into a friendship. For us, it is a welcome friendship because it includes frequent rendezvous with the fabulous Margarita.

P.S. Some Margarita's are only available when Laura is in attendance, and you won't find it on the menu. She guards her recipes that closely ;-)

It should be a place with the best there is to drink. Fresh beer, great wine, wicked spirits and amazing one-of-kind cocktails. It should be made with the very best locally produced ingredients, served by the most talented mixologists.

Secondly, the food should be outstanding. Prepared by talented chefs sophisticated enough to entice you with unfamiliar ingredients and exotic tastes, yet hearty enough to be familiar. It should draw from the best Alberta has to offer in beef and pork, and not shy away from the bounty of the rest of Canada.

Thirdly, the atmosphere should be cosy. Not cramped. The music should complement the drumming of laughter of people having fun. The decor natural and the seating comfortable. It should have ample counselling chairs at the bar for easy access to bartender instruction and wisdom. There should be tight-squeeze booths for new lovers and a spot in the sun for lazy late summer afternoons.

Lastly, the perfect bar should be filled with familiar faces. Friends. The people with whom you want to be.

This is exactly what Oona Davis and her business partner Shelley managed to create with the place they named "Where the Buffalo Roam", (also known as Canmore's Saloon). A place where they are comfortable. The kind of place they wanted, but couldn't find anywhere else in Canmore, Alberta.

Observations


For almost 4,000 years buffalo grazed on the Bow Valley's rich pasture and drank from the water of the Bow River. In 2015 the doors of a tiny little Saloon opened on Main Street, Canmore. It took its queue and borrowed its name from these gracious animals. Today it serves up pretty much the same concept. It takes care of the hungry and the thirsty. It is their place to meet, drink, date, socialise or to just to get away after a long working day.

We were welcomed with open arms when we filmed Oona and her team before Christmas 2016.

What appeared at first glance as a tiny, unassuming watering hole surprised us with a variety to drink that shows a real commitment to featuring local brewers, distillers and nearby wine producers. The food is inspirational. We recommend the slow braised beef rib with Christmas colour garnishing (see photo below). However, nothing comes close to the creativity that goes into the cocktails. A cocktail is something we usually pass over because of cost. At this Saloon, it is the feature attraction. Make it count.

I am told it is just the way it is done "Where the Buffalo Roam".

Who perfected the art of living?

Was it the French, the Spaniards, or the Italians? Famous phrases have rung out over centuries of ongoing cultural refinement searching for this answer. Phrases such as "Joie de vivre", "pura vida" and "vivere la vita" all attempt to describe the art of perfect living.

It is a question not to be taken lightly. Many cultures have fought centuries of war over its essence. As with most things in life, you have to lose your innocence to have an opinion. While minutes, hours, days and years are slipping away through the hourglass of our lives, it is profoundly necessary for every person to have an opinion and make up their mind. What is your art of living? Have you to tasted it, heard it, felt it, seen it. Lived it.

Today Two Cowboys dare to weigh in. In the New World, we are lucky. We can get away with borrowing a little bit of living from the Old World and supplement it with the New. With our own roots in South Africa, New Zealand and Canada, we were born into fine wine, refined cuisine and lots of cheese. For us, culinary living must also include beer, smoked brisket, lamb, chocolate, coffee, and oysters.

Life is not all about eating and drinking. It is also about loving family, good friends, fresh air, health and special moments. No matter where you are in the world. All of this is necessary to complete the perfect picture of the art of life.

Observations


Some places make it a little easier. One of those is L'Atelier du Fromage in Auckland, New Zealand. It puts you on the fast track to living. From the moment you step through the door, you are transferred to another world.

If you are from the south of France, it will feel like home. If you've never been to France, it will give you a reason to go. Until you do, Scott and his team will take care of your French culinary needs. All of them. Wine, cheese, croissants, charcuterie, eclairs, macarons and more.

If you need it fresh, resident chef Gilles stationed on his kitchen perch above the humdrum of the shop will orchestrate amazing flavours with fresh local ingredients. He will give you a simple quality meal with no equal in most of Auckland's top restaurants. I don't give out accolades like this lightly. The best pork belly ever: L'Atelier du Fromage. The best beef rib ever: L'Atelier du Fromage.  Gilles is a master with flavour, texture and pairing wine. You have to take it when you get it. The menu changes every week.

Then again, I am politely reminded by Scott, this is how we do it in France. The only part that doesn't fit is that this is in Auckland, New Zealand! Maybe the New World is, after all, discovering the art of living. Maybe the French do know something about it. A visit to L'Atelier du Fromage will certainly give you an authentic and first-class taste of it. If nothing else, it will raise the bar on what to expect.

It comes highly recommended.

Two Cowboys: Come for the View and Stay for Comfort at Murrieta's in Canmore, Alberta

There are many perfect spots for restaurants in Canmore. There is one that is a little more perfect than the others. This is where you will find Murrieta's Restaurant.

The restaurant is centrally located on Main Street in Downtown Canmore. One floor up from street level you get the best views of the surrounding mountains and the hustle and bustle of mountain town holiday shopping. Murrieta's makes the most of it with large windows to the North, West and South. It is located across from the iconic and historic Canmore Hotel.

Murrieta's has spectacular surroundings, and it makes the most of it. As you'd expect from a property in a mountain town it has the compulsory comforting hearth, vaulted ceilings, majestic beams, open plan and captivating scenery. It combines this with soft rays of natural light that flood in from the expansive glass windows. Day or night, prepare to be amazed by open vistas or bright starlight. Have I mentioned the view is spectacular?

Observations


We met up with their new Swiss Chef Marco who recently joined the restaurant. His is doing his second stint in the Bow Valley. He recently revamped Murrieta's menu with new dishes for the Winter season from high-quality ingredients sourced locally and abroad (from B.C. and other places with Sablefish). The cuisine offers up an adventurous, refreshing and inviting blend of seafood, meat dishes and pasta. Ask for the Two Cowboy version of the Pork Chop. Trust us, you will like it. All is served with uncompromising flair and style.

Cody Marks, the Assistant General Manager assured us their trusted favourites are still on the menu. "We keep it on for the locals that know that Murietta's is not just about good food and great views, but also about comfort", he said. "Here you can do a weekly stop for a cold beer, glass of wine or a cut-above bar nibble. It is not just a Sunday place."

Murrieta's is a restaurant with white tablecloths, starched napkins and silverware that includes more than one knife and fork. You will find more than one wine glass at your table, which is necessary when you discover their extensive list of wines on offer. However, Murrieta's is not pretentious. It is a comfortable place where you can bring your wife and girlfriend, out-of-town business guests or the whole family on a Sunday to have comforting well-prepared food.

Everyone is going to get something they like off the expansive menu and people won't look funny at you when you accidentally drop your fork.

Come for the view, the ambience, and the food. If you are local, come to see friends at Canmore's original white tablecloth restaurant. The place with the best views in town.

Two Cowboys: Mi Lugar Favorito Para Margaritas en Canmore, Alberta

Here's the confession. If you don't know already, I have two girlfriends.

Caipirinha and Margarita are both breathtakingly beautiful. They make my world a better, happier place. You need to be careful to pick a favourite. If you do, don't let them know about each other. If I have to pick one, it will be Margarita (Please don't tell Caipirinha).

If I cannot meet her her at her place we often meet halfway at our favourite alternative spot in Canmore, Alberta. A small restaurant operated by Mexico City natives. A place she calls her home away from home. For me, it is my home with good friends, good food, and good Margarita. It is
Aroma Mexican Restaurant, an authentic Mexican establishment in the Rocky Mountains of Alberta, that is owned and operated by Jose Castillo. A little bit of Mexico in the snow. Margarita and my happy place.

Jose and his maître d', Rafael transports us weekly to lapping shores on the Caribean sea, filled with flavours and aromas from his homeland. Mole verde, salsa verde. Pick any verde, for your little bit of Mexico in the mountains. Above all, remember to meet Margarita. She will take your breath away.

Impressions


Canada is a land of many peoples. Immigrants from all over the world make it their new home. The Castillo family from Mexico journeyed via Montreal to finally settle in Canmore. They operate their very own authentic restaurant on Main Street. They are now Canadian. With them came their traditions of authentic Mexican cooking and a wicked understanding of the perfect Margarita.

Canmorians gained a little bit of Mexico without having to make the pilgrimage south. We can have our weekly dose of the good times in measured and responsible quantities, right here at home in Canada.

How do I know it is authentic?

Ask for Jose, the owner, operator and head chef. You will see a head peak out from a hole in the wall with a view to the kitchen at the back. This is where Jose will be busy stirring his mole on the stove, which is Mamacita's recipe from way, way back when. The restaurant is authentic because, the owner, which is Mexican, cooks his favourite home-made dishes for his favourite customers, himself.

Aroma is often filled to capacity. Yet, you will always find one table marked "reserved". That is the table that is kept for the surprise arrival of special guests. Friends of Jose and Rafael. Loyal and long-standing customers.

Let us just say, we've never been turned away.

o-CNN: Cowboy News Network - Canmore Uncorked, Long Table Dinner

Many Many Courses Later...

The weather was good. The mountains were beautiful. The sweet aroma of roast pork filled the air as the guests arrived for the pinnacle event of the Canmore Uncorked Festival: The Long Table Dinner. 



You couldn't have asked for a better venue, weather or company at this years dinner. Not one seat was empty. A hundred and fifty guests were treated to more courses than they can remember. Remembering appeared to be the main challenge this year while the wine flowed, the beer was crisp, and the waiters were galloping plates of delicious edible creations to an enormous table in the middle of the road, in downtown Canmore.

The event is usually sold out long before the tickets go on sale. Yes, you heard it right. You need a local to scalp you tickets for this one. 

Canmore Uncorked is about talent, dishes, and superb beverages. The long table dinner never disappoints. Set your watch and calendar for 2017's dinner reservations, and make sure you befriend a Canmorian (or, as some old timers refer to us: "Canmorons") to secure your ticket. Without this treasured relationship, you will be exactly where you are this year. A spectator!
